Description
A warm and healthy cabbage soup packed with vegetables and herbs. Perfect for a cozy dinner or light lunch, and easy to customize.
Ingredients
1 medium head of cabbage, chopped
1 large onion, diced
3 cloves garlic, minced
2 carrots, sliced
2 celery stalks, chopped
1 can (14.5 oz) diced tomatoes (no added sugar or salt)
4 cups vegetable or chicken broth (low-sodium)
1 tsp dried thyme
1 tsp dried oregano
Salt and pepper to taste
Instructions
1. Begin by chopping the cabbage into bite-sized pieces, and dice the onions, carrots, and celery. Mince the garlic and set aside.
2. In a large pot, heat a small amount of olive oil over medium heat. Add the diced onion, garlic, and carrots. Sauté for about 5 minutes until softened and fragrant.
3. Add the cabbage, celery, diced tomatoes, and broth to the pot. Stir well to combine. Bring the mixture to a boil, then reduce the heat and let it simmer for 30–40 minutes, or until the cabbage is tender.
4. Add the dried thyme, oregano, salt, and pepper to taste. Simmer for another 5 minutes to let the flavors meld together. Adjust seasoning if necessary. Serve hot and enjoy!
Notes
Use low-sodium broth and no-salt-added tomatoes for a heart-healthier version.
Add cooked beans or shredded chicken for a protein boost.
Leftovers store well in the fridge and taste even better the next day.
